Designation: Protected Designation of Origin Santorini
Grape Variety: 100% Assyrtiko
Fermentation: In stainless steel vats, at a controlled temperature of 17-18ºC, lasting almost three weeks.
Maturation: Nine months in stainless steel vats, on fine lees with occasional batonnage, twice a week.
Nose: Lemon zest, lime peel, citrus blossom, and balm lead, accompanied by waxy citrus notes and wet volcanic stone. A layered aromatic profile unfolds with hints of sea spray, grapefruit peel, and subtle herbs, evoking the island’s persistent winds.
Palate: Bright citrus fruits — lime, grapefruit, quince, orange peel, and green apple — unfold across a vibrant, tensioned structure. Lees ageing introduces subtle notes of brioche, fresh bread, and almonds, softening Assyrtiko’s mineral austerity. The finish is long, saline, and refreshing. A wine that is bursting with character and energy.
