Grape Variety: 100% Assyrtiko
Fermentation: In stainless steel vats, at a controlled temperature of 16-17ºC, lasting almost three weeks, partially uninoculated.
Maturation: A long maturation of approximately thirty months follows in stainless steel vats on fine lees with batonnage, while 25% of the blend ferments separately in French oak for twelve months before blending with the rest.
Alcohol: 14.5% ABV
TA: 6.6 g/L
