Winemaking Process: The Malagouzia grapes are carefully selected from the mountainous regions of Florina and Pieria in Macedonia, where low yields contribute to exceptional quality. Harvest timing is determined through a combination of berry testing and analytical data, ensuring optimal ripeness. The grapes are harvested in the cool early hours to preserve freshness and undergo strict manual sorting. Standard white vinification methods are used, including cold maceration, controlled fermentation with selected yeast strains, and maturation in the tank on fine lees until bottling, adding complexity and depth.
