Designation: Protected Designation of Origin Santorini
Grape Variety: 100% Assyrtiko
Fermentation: In French oak, with 64% in 500 L barrels, 25% in barriques and the balance in an oval 12hl vat, at ambient temperatures, lasting almost three weeks, partially uninoculated.
Maturation: Twelve months in French oak barrels and twelve additional months in stainless steel vats, on fine lees and occasional batonnage throughout.
Nose: Generous and layered, with aromas of ripe citrus, quince, and preserved lemon, supported by hints of salted caramel, toasted spice, and subtle smoke. Volcanic minerality adds depth and additional layers of complexity.
Palate: Dense, structured, and texturally rich. Lemon curd, dried herbs, and crushed volcanic rock unfold across a core of vibrant acidity. Oak adds nuance—smokiness and toasted spice —while the finish is long, saline, and mineral, leaving a lasting and beautifully evolving impression.
Alcohol: 15% ABV
