This wine is made with 100% Assyrtiko from selected vineyard blocks in Amyndeon and undergoes fermentation in stainless steel tanks and maturatered for 4-5 months on fine lees. Assyrtiko is intense, with refreshing acidity and firm structure, this is a wine ideal for food pairings: fish fillet roasted or poached, fried cod, oven-roasted stuffed squid, pasta in white sauce, white cheeses.
