Bright ruby color with purple highlights. On the nose there are aromas of red fruits and spices, with notes of violet and licorice. Its tannins, which are immediately noticeable without being aggressive, its acidity, which maintains the freshness of its characteristics for years, and finally its complex structure compose a fine wine with a strong aftertaste.
Pre-fermentation extraction at a temperature of 12 - 15οC for seven days. This is followed by fermentation for about twenty days at temperatures of 30 - 32 οC. The new wine is transported in French oak barrels 300 lt, type Nevers, for the realization of malolactic fermentation, where it remains with its mud for a period of two months. After the end of the milking, it is followed by extraction and continuation of the aging for at least another ten months.
PDO Naoussa. In the Vlach local dialect of Metsovo, inima will say heart. For Katogi Averoff the meaning of the word Inima is deeper and more substantial. It expresses the soul and captures the mood, fun and passion of all people involved in the wine production process.
