Pouilly-Fuissé “Aux Chailloux” comes from parcels located on the mid-slope. They produce flattering, nutty, gourmet wines. Pouilly-Fuissé “Aux Chailloux” is a wine that is open and pleasurable from the outset, but which will surprise you by evolving very slowly, giving it good ageing potential. Domaine Pascal Renaud is one of the largest owners of “Aux Chailloux” wines.
Colour: Golden yellow, rich.
Nose: Buttery nuance, delicate, hazelnut.
Tasting: A lot of richness and roundness at the start of the tasting, with a very expressive, nutty, and mineral finish atypical of this terroir.
Aging
Pouilly-Fuissé “Aux Chailloux” can be drunk from the first year, but it is strongly recommended to wait a few years. Its richness allows it to develop flinty aromas on the palate and brioche aromas on the nose. This gives it a balance worthy of the great white wines of Burgundy.
Food Pairing
Pouilly-Fuissé “Aux Chailloux” goes very well with spicy hot dishes, foie gras and chicken in cream sauce.
Serve chilled, between 10 and 12°C. Don’t hesitate to decant.
