VISUAL: Bright lemon colour
AROMA: Medium-intensity bouquet. Youthful and pleasantly fragrant. Notes of white fruit such as pear and green apple with delicate citrusy and white floral aromas. The presence of mineral notes and wild Cretan herbs adds complexity and typicity.
TASTE: Dry, medium body, with vibrant acidity and medium alcohol. Soft and delicate flavour dominated by the characteristic aromas of Vidiano. Long, saline aftertaste.
FOOD PAIRING: “Horiatiki” salad with barley “dakos” and capers, “skiufihta” pasta, grilled sardines with tomatoes and spices, octopus marinated in vinegar, large grilled fish, “adikristo” lamb, Sfakian pie.

WINEMAKING PROCESS: Assyrtiko comes from 6 different plots of land in the province of Eastern Heraklion, selected by our team based on their locations and their particularities. Each vineyard was vinified separately in stainless steel tanks. The grapes were kept cold and then whole-bunch pressed. After the end of fermentation, gentle battonage was carried out with the fine lees for a short period of time (3 months). Vidiano was harvested from a steep-slope vineyard in the neighbouring village of Myrtia. The grapes were destemmed and cold macerated in order to gain some of the variety’s aromatic complexity. The alcoholic fermentation took place in stainless steel tanks under low temperatures. The character of this particular plot, gentle and mild aromatically, we considered that it fits the character of the year, to complement Assyrtiko – adding texture and complexity. The blend was made after the end of fermentation. Bottled after mild filtration in February 2026.
