Winemaking Process: Grapes for this Assyrtiko are meticulously selected from the mountainous vineyards of Macedonia, specifically Florina and Pieria, where the low yields produce exceptional quality. The harvest timing is determined through a combination of berry testing and analytical data, ensuring optimal ripeness. Grapes are harvested early in the day to preserve freshness and are sorted manually for quality. Alcoholic fermentation occurs at controlled temperatures with carefully selected yeast strains, and the wine is aged on its fine lees in the tank until bottling, contributing to its rich complexity.
