Fermentation: In stainless steel vats, at a controlled temperature of 16-18ºC, lasting almost three weeks.

Maturation: Four months in stainless steel vats.

Nose: Medium intensity, with citrus-driven fruit (lemon, grapefruit, mandarin) accompanied by delicate floral hints and subtle exotic fruit notes like mango and peach. Minerality and saline nuances add further complexity.

Palate: Dry and refreshing, with crisp acidity and medium body. Flavours of citrus fruit, pear and green apple carry a saline minerality. The finish is bright, luminous and very refreshing with a hint of saltiness.
