A Xinomavro from selected vineyard plots in Goumenissa, which gives full expression to the vigour and unique character of this emblematic Macedonian variety. Bright ruby colour. Aromas of tomato, ripe wild cherry, blackcurrant, jammy figs, and dried plums, with notes of coffee, spices, licorice, forest floor, and cigar box. Distinctive, vivid taste, rich in tannins, with a complex aftertaste.
FOOD PAIRING
Serve with roasted meat, fatty yellow cheese, smoked cold cuts, grilled vegetables, and bolognese.

HARVEST
Produced from a small, low-yielding vineyard in Goumenissa. We regulate the yield through strict pruning, regulation of irrigation, and green harvest. At the winery, our main goal is to produce a wine that exhibits all the typical characteristics of the cultivar. We perform a very long post vinification maceration up to 2 months. The wine is then aged 12-15 months in oak barrels and at least one year in the bottle before its release.
VINIFICATION
Late harvest, long skin contact, maturation in oak barrels for 18 months.
