Grape Variety: 100% Assyrtiko
Fermentation: In cement vats, at a controlled temperature of 18-19ºC.
Maturation: Fourteen months in cement vats, on fine lees.
Nose: Lemon zest, lime peel, grapefruit, citrus blossom and crushed volcanic stone with subtle saline notes.
Palate: Crisp citrus fruit, green apple and mineral tension supported by vibrant acidity. Linear, precise and refreshing with a long saline finish.
Alcohol: 14.5% ABV
TA: 6.6 g/L
