VINEYARD
The grapes are sourced from the viticultural zone of Macedonia, in the Northern part of Greece. The grapes are carefully selected from chosen vineyards, from 40- to 60-year-old vines. The vineyards were selected based on their soil, the vines’ health and capacity to reach full maturity. The climate of the wider region, with significant temperature difference between day and night, as well as the variety in morphology, creates excellent conditions for viticulture.
WINEMAKING
The must comes from direct pressing. For the fermentation, stainless steel tanks are used in control temperatures of 17-19℃. The wine goes through 4 months of periodical fine less stirring (batonnage) 1-2 times a week in order to balance the increased acidity with richness.
TASTING NOTE
Medium salmon colour. Floral aromas are dominated by roses, as well as red fruits such as strawberry and cherry, and aromas of tomato. On the palate, expressive character, medium body that follows the nose aromatically while being characterized by a light sense of tannins. It is an ideal choice for aperitif but also for combinations such as dishes of Mediterranean cuisine, fried appetizers, and fish.
