Winemaking Process: The Vidiano grapes are carefully selected from the higher altitude vineyards in the Dafna area of Heraklion, Crete. The harvest timing is determined through a combination of berry testing and analytical data, ensuring optimal ripeness. Grapes are picked during the cool early hours of the day and undergo strict manual sorting. Traditional white vinification methods are followed, with whole-bunch pressing and fermentation at controlled temperatures using selected yeast strains. The wine is aged both in tanks and oak barrels, with regular stirring of the fine lees until bottling to enhance its complexity.
