VINEYARD
Sourced from select parcels of Xinomavro in Agios Panteleimonas, within the PDO Amyndeon region in Northern Greece. The vineyard’s poor sandy soils and altitude of over 600 metres above sea level contribute to the distinctive character of the grapes. This cooler wine region, with its unique meso-climate, provides Xinomavro with the ideal conditions to exhibit both power and elegance.
For this sparkling wine, grapes are specifically grown on small blocks located near the region’s lakes. These are the first Xinomavro grapes harvested each year, carefully cultivated to achieve a harmonious balance of high acidity, lower sugar levels, and optimal phenolic ripeness.
2023: THE VINTAGE IN BRIEF
The year began with an unusually warm and dry winter, followed by rain and cooler-than-average temperatures during spring and into June. These conditions required meticulous attention in the vineyard and, in some cases, expedited practices such as shoot thinning to improve aeration and sun exposure. From mid-summer onward, the weather stabilized, allowing the Xinomavro to ripen fully.
For our sparkling Xinomavro, we harvested the grapes when they reached an alcohol potential of 10.5% ABV. These were picked from blocks closer to the lakes, beginning on 28 September—almost two weeks earlier than the harvest for our still rosés and red wines.
WINEMAKING
Grapes undergo rigorous selection on a conveyor belt before the first fermentation, which takes place in stainless steel tanks at low temperatures. During this stage, the wine is in contact with fine lees and undergoes gentle, periodic stirring (batonnage) for several months.
The wine is then transferred to closed tanks for its second fermentation, during which CO₂ is released naturally, and the alcohol content rises to 12% ABV. Bottling follows, preserving the wine's freshness and effervescence.
TASTING NOTES
Brilliant, rich pink in colour with persistent, fine bubbles. The nose is intensely fruit-forward, featuring aromas of wild strawberry, white-fleshed cherry, and hints of tomato. On the palate, it is rich and fruity with vibrant acidity and a delicate touch of sweetness. The finish is deliciously refreshing and invigorating.
